Super Bowl is here, so I was looking for foods from Atlanta. I like to keep with my tradition of making foods from the Super Bowl host city. This salad kept coming up as famous for Atlanta. There were many different variations of this but I think this sounded the best. Some recipes used canned fruit cocktail, and some used cream cheese, and I will be leaving out the pitted dark cherries. You buy the lemon curd, found in the jam section in the grocery store. I also love to use the leftover lemon curd on shortbread cookies.
Atlanta Frozen Fruit Salad
1 Cup pitted dark sweet cherries, canned – drained ¾ Cup canned peaches, drained and diced 1 Cup seedless grapes (red or green), cut in half ¾ Cup maraschino cherries, cut in half ¾ Cup pineapple, tidbits or crushed drained 1 medium banana, sliced thin ½ Cup chopped pecans 1 pint whipping cream 2 Tablespoons powdered sugar 2 Tablespoon lemon curd
Drain all the fruits by placing then into a colander and then place into a large bowl. Stir to mix. Whip the cream until soft peaks form. Mix in the powdered sugar and lemon curd. Fold cream mixture into the fruits and add pecans.
Line a round mold or bowl with plastic wrap or if you want individual serving use cupcake papers. Spoon the mixture into the bowl or papers, the freeze 8 hours or until firm. When ready to serve remove the mold (bowl) or the cupcake papers. Serve while frozen.
