Buttermilk Bran Muffins

I always wondered how people really ate All-bran cereal. I mean really, I just couldn’t image eating a bowl of sticks. Then I was given this recipe by my daughter-in- law’s mother. These muffins are just awesome! They are super healthy for my hubby. I make a double batch of these muffins and then put them into the freezer. Pull one or two out and pop into the microwave whenever breakfast time is crazy. They are great with honey. I hope you get a kick out of making muffins out of sticks! They are healthy and taste good too.


Buttermilk Bran Muffins

½ Cups boiling water 1 ½ cups Kellogg All Bran Cereal 1/2 Cups sugar ¼ cup brown sugar ¼ cup butter, softened ¼ cup applesauce 1 egg 1 ½ tea. baking soda ½ tea. Salt 1 ¼ cups whole wheat flour 1 cup buttermilk ¾ cup raisins or nuts, if desired

Pour boiling water over All Bran then let sit until softened, about 15 minutes. Prepare muffins pan by spraying with cooking spray OR put in cupcake papers. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add eggs one at a time again beat until light and fluffy. In a separate bowl, combine dry ingredients. Add to the butter and sugar 1/3 of the buttermilk, then 1/3 of the flour mixture. Mix. Then add another 1/3 of each, add last 1/3 of flour mixture and buttermilk. Add the raisins and All-bran. Continue mixing until combined. Scoop into prepared muffin pans, fill ½ full Bake at 375 degrees 15-20 minutes.
