We had a family dinner one Sunday and our friend, Wendy Sorenson, shared this recipe with our family. We all fell in love with them! I hope you do too!
Caramel Filling
14 ounces of Kraft soft caramel pieces, unwrapped
1 can (14 oz.) sweetened condensed milk
2 Tablespoons butter
Rice Krispie Layers
6 Tbsp. butter
10 cups Rice Krispie cereal
16 oz bag of mini marshmallows, (keep out 2 cups for the middle layer)
Butter TWO cookie sheets pan (11x16x1) and set aside
In a large microwave safe bowl combine caramel pieces, sweetened condensed milk and 2 Tablespoons butter. Microwave on high in 1 minute, increments and stir after each minute until caramels are melted, approx. 3-4 times.
Stir until smooth, set aside.
In a large saucepan, melt 6 Tbsp. butter and 8 cups marshmallows. Stir over medium heat until marshmallows are melted.
Pour 10 cups Rice Krispie Cereal into marshmallow mixture, stir until coated.
Divide into the TWO prepared pans. Using the butter wrapper, press the mixture to make level.
Pour caramel over top of one Rice Krispie layer and then sprinkle 2 cups mini marshmallows on top of that.
Refrigerate that pan until caramel has cooled about 20 minutes.
When caramel has set tip the other layer onto the top of caramel.
Refrigerate for at least 2 hours before cutting into squares.
You can also melt some chocolate and drizzle on the top of the bars.
**To make Gluten Free use Crispy Rice Cereal that does not contain “malt’”.
Oreo Rice Krispie Treats
4 cups Rice Krispie Cereal
20 Oreos, chopped
5 cups mini marshmallows (8 oz.)
4 Tbsp. butter plus 1 Tablespoon to butter the pan.
Butter a 9x13 dish.
In a large bowl, pour measured Rice Krispie Cereal.
Put the Oreos into a zip lock bag and smash with a rolling pin. You want the Oreos to be a variety of sizes, chunky to finely crush.
Add crushed Oreos to the Rice Krispie cereal and stir to combine.
In a medium saucepan, heat butter and marshmallows together over medium heat. Stir constantly, until they melt.
Pour melted marshmallows over cereal and Oreos, stir quickly combine all the ingredients.
As soon as all the cereal is combined, spread mixture into the prepared 9×13″ dish. Use the butter wrapper to press the mixture into the dish, and flatten as needed.
Let sit until completely cooled. (If you can wait!)
*To make Gluten Free use Fruity Pebbles OR Gluten Free Puffed Rice Cereal. Malt is what makes the cereal NOT gluten free. They also make Gluten Free Oreo Cookies.
*To make Dairy Free use Dairy Free margarine instead of butter.
These are a fun treat that kids can help with.
