Creamy Spinach Artichoke Chicken
4 boneless skinless chicken breasts pounded thin.
3 Tablespoons olive oil
Salt and Pepper to taste
Sauce
2 Tablespoons butter
1 Tablespoons minced garlic
1 Tablespoon flour
½ cup water
1 Tablespoon chicken base (Better than Bouillon)
1 cup half and half
½ cup grated Parmesan cheese.
¼ teaspoon white or black pepper
1 teaspoon salt
1 cup fresh spinach, chopped.
1 cup canned artichokes, quartered.
In large skillet add olive oil and heat to medium high. Add chicken and season with salt and pepper. Sauté until brown on each side and reaches 165 degrees. Remove chicken from pan and set aside.
In same pan add the butter and garlic. Cook until garlic is softened. Whisk in flour and cook for 3 minutes. Whisk in water, chicken base, and half and half. Heat until thickened. Add the Parmesan cheese, pepper and salt and spinach and artichokes. Heat until warmed through. Add the chicken back to the sauce. Taste to adjust seasoning.
Serve over Fettuccine noodles or rice.
To make Gluten Free use GF flour mix and GF noodles. Check the chicken base too.
