Fudge Supreme Bars

These “bar” cookies are perfect for a game night snack. I got this recipe from my daughter-in-law;
they make them for their monthly poker game.
Fudge Supreme Bars
1 Cup Butter
2 Cups Brown Sugar
2 Eggs
2 teaspoons Vanilla
2 ½ cups Flour
1 teaspoon Baking Soda
1 teaspoon Salt
3 Cups 1-minute Quick Oatmeal**see notes.
1 Cup chopped pecans or walnuts, optional.
For Fudge
6 oz. (3/4 Cup) Chocolate Chips
1 Can (14oz) SWEETENED Condensed Milk
3 Tablespoon Butter
½ teaspoon salt
2 teaspoons vanilla or almond extract
In a medium size mixing bowl. Cream together the butter and sugar, then mix in eggs and vanilla.
In another medium size mixing bowl sift together flour, soda, salt and oats and nuts if using.
Stir in the dry ingredients to the creamed mixture.
Spread 2/3 or this mixture onto the bottom of a greased 9 x 13 pan. Reserve the remaining third of the mixture.
For the Fudge
In a glass bowl combine chocolate chips, condensed milk, butter, and salt.
Melt in the microwave on 50% power for 1 minute and stir. Continue to heat and stir until chips are
melted. Add vanilla or almond extract.
Pour this mixture onto the oatmeal mixture in the pan. Spread to smooth.
Add the remaining oatmeal mixture over the top, by dropping by teaspoons full. It will not cover all the fudge but will bake to be smoother. Do not stir or spread.
Bake at 350 Degrees for 25 minutes. The edges should be browned.
Serve while it is warm with ice cream or let cool and serve as a cookie bar.
***We use ½ Dark and ½ Semi-Sweet Chocolate Chips. To make Gluten Free use Gluten Free All-purpose flour and use GF oatmeal. If using Old Fashion Oatmeal, just blend in the food processor for a few seconds to break it up a bit.
